Sweet & Sour Pork

Ingredients
1 kg of lean pork
salt
pepper
flour
oil for frying
sweet and sour sauce
- cut the meat into cm cubes and sprinkle with salt and pepper
- dredge with flour
- fry meat slowly in oil till well done
- prepare sweet and sour sauce and leave meat in the sauce for a few hours
- heat well before serving and serve meat in the sauce
Sauce
Ingredients
1 onion
2 cloves of garlic
1 sweet green pepper
25 ml of vegetable oil
2 small carrots, finely chopped
125 ml syrup from canned pineapples
125 ml vinegar
125 ml sweet wine
125 ml tomato puree or 12.5 ml soy sauce
50 ml brown sugar
25 – 37.5 ml of cornflour, mixed with some cold water
250 ml canned pineapple cubes
25 ml preserved ginger or ginger pickle

pepper
- slice the onion and garlic
- remove the pips from the green pepper and slice into rings
- add the pineapple syrup, vinegar, wine, tomato puree, soy sauce and sugar
- simmer for 10 minutes and stir occasionally
- stir in the cornflour and cook for 2 minutes, stirring continuously
- add the pineapple cubes, ginger, salt and pepper
- Serve with the pork
